I just glanced at the manual, it looks like it has built in EQ I can use to set the crossover between my speakers and sub in a 2.1?Most DACs don't. Ours does. And on top of it you even have the choice to record the DSP processed signal. Manual page 22, Loopback to USB.

As the equalization is being done at the source, it is the equalized signal that arrives at the DAC (any DAC). That is the signal that will be converted from digital to analogue. The RME ADI-2 DAC FS is strictly a 2-channel DAC, whereas miniDSP usually have 4 or more channels. For example, a 2-in / 4-out miniDSP has a matrix mixer, which let you route signals from either of the 2 inputs (or both) to any of the outputs (see below).How good is the DSP on these vs something like a miniDSP? That depends on your use case. The miniDSP can be used to integrate a subwoofer (has crossover, delays, etc) and even room EQ, which the ADI-2 DAC does not have, for instance.

The DSP in the RME gives you 5 band parametric EQ, tone control, loudness compensation, and cross-feed.
